Rainy Day

Today was rainy! There was actually a tornado warning for our area, but luckily we weren’t hit.

Fortunately for my official taste testers, the lack of sunshine made it a perfect baking day.

Blueberry Banana Bread:

Ingredients
2 very ripe bananas
1 tbsp ground flax seed
2 tbsp warm water
1/2 cup apple sauce
1 tbsp apple cider vinegar
1/2 cup almond milk
1/4 cup sugar
1 tbsp vanilla
1 1/2 cups white whole wheat flour
2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1/2 cup blueberries

Directions
Preheat oven to 350 degrees fahrenheit. Mix flax with water and vinegar with almond milk, set both mixtures aside. Mash bananas, add in apple sauce, flax mixture, sugar, vanilla, and curdled almond milk. Sift together dry ingredients and add to wet. Fold in blueberries. Pour batter into a sprayed or greased loaf pan and bake for about 30 minutes.

I also made nonvegan chocolate chocolate chip cookies and baby ruth sugar cookies.

Baby Ruth Sugar Cookies:

Ingredients
1 cup white whole wheat flour
1/2 cup white sugar
3/4 tsp baking powder
1 tsp pure vanilla extract
1 tbsp ground flax seed
2 tbsp warm water
1/4 cup butter (earth balance would be a good sub!)
Mini baby ruth candy bars

Directions
Preheat oven to 350 degrees fahrenheit. Mix flax with water and set aside. Beat butter, sugar, vanilla, and flax seed mixture. Sift together flour and baking powder and mix into the wet ingredients. The dough may be a little crumbly. Form balls and flatten on an ungreased baking sheet. Press half of a baby ruth onto each cookie. Bake for 8-10 minutes.

I’m sure these could easily be veganized by replacing the butter with Earth Balance and using vegan chocolate.

My Grandpa made popcorn last night and what he didn’t eat sat out on the counter absorbing moisture and getting stale. So here’s my tip of the day: if you are ever faced with stale popcorn, putting it in the microwave for 30 seconds makes it nice and fresh again. It made for a very nice snack.

Later this afternoon we all went to the movies to see The Fighter. I was pumped to see it again and my family all loved it too!
