Things I Love Thursday XXV.

It’s Thursday which means it’s time for Things I Love Thursday! First up though, I’ll recap my day. After playing with the dog outside all morning I finally dragged willingly drove myself to the gym for an 8×800 speed workout. I started out with a mile warmup and did my sprints at a moderate 5-k pace (7:30-8:00 minute mile paces) and recovered with 400 meters at a 10:00 minute mile pace. 7 miles and an hour later I was soaked in sweat and ready to pass out on the gym floor (I might be exaggerating a little). I resisted that urge and headed straight for the showers instead.

After putting myself back together, I drove to Walmart to pick up a new battery for my 35mm Canon SLR camera (which my Grandma gave me for my high school photography class 3 years ago, wow was it really that long ago?!) Anyway, I used to be very into darkroom photography and somewhere between graduating and completing my first year of college I kind of abandoned it. I am excited to start taking photos again though! I should scan and post some of the photos I took in high school sometime.

When I got home I ate lunch, weeded the garden, played with the pup again, and laid outside in the beautiful sunshine for a while. I’m going to miss these kinds of days come February!

Question: What has been making you smile?

Pesto + Guacamole

Today was a huge contrast from yesterday temperature-wise. It only got up into the 60s! My right ankle was a little sore from yesterday’s running so I headed to the gym for a joint-friendly albeit tough 45 minute “random terrain” elliptical workout at level 5. I definitely think you can get a great workout on the elliptical but so many people choose not to take advantage of the different workout settings and levels. Jenna Marbles says it best. By the end of my 45 minutes I was drenched in sweat and felt compelled to change my shirt before doing my ab workout. Yeah, gross, I know.

Anyway, after I finished up at the gym I ran a few errands including a trip to the bank, post office, and grocery store. The rest of my day was pretty relaxed.

While Cheya and I were outside playing fetch I picked a ton of fresh basil and parsley from the garden. I decided to utilize my new food processor to make pesto (sort of).

1-1/2 cups basil + 1/2 cup parsley:

+ 1/2 an avocado + 2 tablespoons nutritional yeast + salt + garlic + onion:

+ a few seconds in my snazzy new food processor:

= pestomole! Or gaucesto!

I pretty much made up the recipe as I went and I’m more than happy with the result. Kitchen success! I already want to put this on just about everything.

On a sweeter note I tried this new nana banana Wai Lana Yogi bar.

The ingredients are stellar but don’t let the nutrition facts fool you, there’s 2 servings in one package!

The ingredients, appearance, texture, and taste are all very similar to Larabar’s banana bread flavor (which is a good thing).

Overall, I thought this bar was good. Not great and not terrible, just good.

Long Run Relocation

After an early morning of some running around I finally got my long run in, although it wasn’t exactly continuous. My friend Jerod and I ran outside for 4.62 miles until the heat became seriously unbearable.

That sign says 89 degrees!

Instead of quitting, we ran straight to the gym to finish our run on the treadmills in the comfort of air conditioning while watching the women’s world cup.

4.62m + 3.5m = 8.12m! My pace averages were 9:16 and 9:19 respectively. After we finished up, we rinsed off and went in the pool. Perfectly refreshing!

After coming home, playing with the puppy for a while, and eating lunch, Jerod came over. I offered to make his lunch and his requests included a grilled cheese sandwich and brownies.

Whole wheat bread, Earth Balance, and fresh mozzarella

The brownies came from a Duncan Hines box and we didn’t have eggs so I attempted to make them with a flax “egg” substitute. They came out insanely gooey instead of brownie-like, but that wasn’t necessarily a bad thing! Although they were technically vegan, I stay away from stuff like this because they are overly processed and have scary ingredients like hydrogenated oil (which I avoid like the plague). They looked good and smelled good and according to Jerod, tasted good, but they most certainly would not make me feel good. Now that that box is out of the house though (sorry Mom!), I foresee baking healthy (but not healthy tasting) Emily-approved brownies in the near future!

You’d think writing a blog about healthy living would encourage me to take more pictures of my own food but the only picture of today’s eats is this:

The biggest, juiciest, most delicious orange ever!

Dinner included lentils (yeah it’s an obsession) and collards followed by a big bowl of cereal along with plenty of peanut butter pretzels and Lindt 70% dark chocolate for dessert.

Pudding Pops

Yesterday I made organic chocolate pudding pops! They are pretty self explanatory through the photos so I’ll leave this recipe wordless:

Tah-dah!

This morning I went for a 3 mile run with the puppy. It felt much better than yesterday’s run! Phew!

Average pace 6.7 mph and max pace 11.5? I definitely do not remember running that fast so it must be a glitch.

After my run FedEx dropped off my new Wolfgang Puck food processor! Is it strange to get this excited over a kitchen appliance? The foodie in me says no.

Excuse the finger in the picture, I think I was a little too excited about the reversible blades to notice. Anyway, so far I have made baked potato chips for my sister using the adjustable slicing blade (sorry no photos) and banana soft serve for myself (again, no photo). So far so good!

My Mom, Sister, and I went out to dinner at King David’s again tonight. You can officially assume we are obsessed. I had the vegetarian plate with salad, falafel, tabbouleh, hummus, babaganoush, and about half a pita along with an unsweetened iced tea and a few of my Mom’s sweet potato fries. We then made a trip to TJ Maxx (where I got new Saucony Grid Twisters yay!) and Wegmans for a few groceries. About 10 minutes into the drive home I realized that my phone, which I had left in the car, was nowhere to be found. It turns out I actually didn’t leave it in the car but actually left it at the restaurant. Luckily my Sister called it and our waitress picked up and said she had been waiting for us to come back for it! Disaster averted.

I have an early wake-up call tomorrow so it’s off to bed soon for me!

Earth Wind & Fire

Early yesterday afternoon my Mom and I headed to Tanglewood, Massachusetts to see Earth Wind and Fire!

Consumed in the car on the way there:

Strawberries and Blueberries

Spinach and Artichoke Hummus

Carrots (and unpictured snap peas) For Dipping

We then stopped at the outlets before heading to our hotel.

By some miracle we walked away with zero purchases!

After dropping off our bags we headed to the concert.

I didn’t know all the songs but it was still a great concert!

By the time it was over it was only a little after 9:00 and my Mom and I were wide awake. We only live about 3 hours away and really wanted to sleep in our own beds so we went back to the hotel, picked up our bags, and drove home! We made it back by about 1:00 in the morning and were able to sleep comfortably and peacefully until 10:00am!

I eventually got my rear end out the door for a run. I had planned on a 9 mile run but the entire time I just did not feel like myself. I wasn’t into the run so 6 miles in, and 3 miles from home I called my Mom to have her pick me up. I’ve never cut a run short before but the thought of having to run 3 more miles made me want to cry. I think the fact that I didn’t follow my usual routine which includes a. running in the morning b. eating an apple (I forgot to eat anything before leaving) and c. using the bathroom (yeah, I was considering going behind a tree for pretty much all 6 miles) made my run a lot more difficult than usual. I’m not too bummed about it though, I can get a longer run in later this week I think!

On the bright side, the 6 miles that I did run weren’t too shabby (a little over 9 minutes per mile) and I used a new running app!

When we got back, I immediately used the bathroom, ate that apple, changed into dry clothes and compression socks, and vegged out.

I also made some baby blueberry pancakes. I had one pancake recipe fail in which I tried to use a combination of oat, buckwheat, and coconut flour. They turned out… disgusting. So I instead used whole wheat pastry flour which yielded decent enough results.

All I did was combine 2 tablespoons whole wheat pastry flour and 1 tablespoon rolled oats with a pinch of baking powder, salt, and cinnamon and then stirred in a little less than 1/4 cup of almond milk mixed with 1/4 teaspoon each of vinegar (to thicken) and pure vanilla extract along with some blueberries. Cooked in a skillet and topped with pure maple syrup, they were perfect!

I have some other awesome eats to share tomorrow!

Question: Do you like Earth Wind and Fire? Have you ever cut a run short?

Peanut Butter Coconut Cookies

These not too sweet, soft and cake-like cookies are vegan, gluten free, high in fiber and protein, and most importantly, are delicious!

Ingredients:

*1/4 cup sugar (half white half brown)
1/4 cup natural peanut butter
1/4 cup applesauce
1 TBS ground flaxseed
3 TBS warm water
1/2 tsp pure vanilla extract
1/2 cup plus 2 TBS coconut flour
1/2 tsp baking soda
1/8 tsp salt

Preheat oven to 350 degrees. Mix the ground flax and water, set aside to gel. Whisk together the sugar, peanut butter, applesauce, vanilla, and gelled flax mixture. Combine the dry ingredients and add to the wet. Spoon dough onto a parchment-lined cookie sheet and flatten (they will not spread in the oven). Bake for 8-10 minutes.

*I originally planned on using 1/2 cup of sugar but coconut flour seems to have its own subtle sweetness and therefore I reduced the sugar to 1/4 cup. The cookies aren’t very sweet but are still very delicious. If you’d like a sweeter cookie however, I recommend adding the additional 1/4 cup.

A day later these cookies are still soft and delicious! They’re not overly coconutty but the flavor is detectable. For more of a coconut flavor you could add shredded coconut, coconut oil or butter instead of applesauce, or coconut extract instead of vanilla extract. I personally like the faintness of the coconut flavor and think the most beneficial addition to these cookies would be chocolate chips!

Oh yeah, the nutritional stats on these? I made 15 cookies but if you make 12 larger cookies you get over 3 grams of fiber and over 2 grams of protein in a sub-100 calorie cookie. Go ahead, have one. Or three!
