NYC Tomorrow! (Irene Permitting)

Thanks to Irene, moving back down to the city has been postponed until tomorrow! I’m bummed but also thankful that I’m not down there right now. I hope everyone who is stays safe! According to the weather channel, the worst for NY is over now.

One of my best friends (and suitemates!), Danielle, had to move in early and she assured me that our suite is fabulous so I’m very excited!

I can’t wait to be running in Central Park again!

It’s been an enjoyable relaxing summer at home with the family but I’m ready for the hustle and bustle of the city!

Anyway, yesterday morning I completed a 5 mile run along with a Jillian Michaels week 3 Ripped in 30 workout! I wasn’t planning on taking a rest day today but my gym in closed on Sundays and it’s raining buckets outside (and will be all day) so I’m not sure what I’m going to do! Maybe bake cookies instead ;)!

Also worth mentioning, Thomas’s Bagel Thins! For lunch yesterday I couldn’t decide between sweet and savory so I had half a zucchini, tomato, basil, and roasted red pepper sandwich on a whole wheat bagel thin and half a peanut butter and apple slice sandwich on a cinnamon raisin bagel thin.

Besides tasting great, they have 4-6 grams of protein and 5 grams of fiber per bagel. These are definitely keepers!

The Great NYS Fair

My morning started off with a 3 mile run followed by a bunch of errands. Later in the day though, Jerod and I went to the fair!

Overall we had a ton of fun but we were both glad to get in the pleasant-smelling, climate controlled, crowd-free car after a few hours of dodging fellow pedestrians.

Waffles & Wegmans

Do you know what today is? It’s national waffle day. And the weirdest thing is that yesterday I was craving waffles and swore I’d make them for breakfast today. I didn’t find out that it’s national waffle day until about 4:00 this afternoon via a Tropical Traditions tweet.

Amazing, huh?

My inner foodie subconscious knew today was the perfect day for waffles! (I used this recipe and topped with half a sliced banana and pure maple syrup.)

Later in the morning I went for a nice and easy 3 mile recovery run. I definitely needed to take it easy after yesterday. My mom and I then went shopping for back to school stuff…

I’m mainly concerned about hygiene and feeding myself, everything else such as my bedding, binders, etc. can all be recycled from last year!

I hate to admit that I bailed on my Jillian Michaels workout today but truth be told I’m not really sorry. I instead went out to dinner at Wegmans (yeah, we’re fancy) with this guy:

I don’t regret not getting in that workout because I ran this morning and spending time with friends before going off to school is much more important to me than fitting in a 2nd workout.

Oh, and sharing coconut milk cookie dough ice cream for dessert didn’t hurt either.


I think I made the right decision.

Ten Mile Tuesday

This morning I cooked up some oats the old fashioned way (on the stove). The result was a giant bowl of thick and creamy banana and cinnamon infused oatmeal. Unfortunately it didn’t look as pretty as it tasted, so no pictures. But I will share the recipe:

1/2 cup Irish style oats
1 cup water
1/2 banana (or more!)
1/2 cup almond milk
1 t. cinnamon
1/2 t. pure vanilla extract
A pinch of salt
2 T. PB2 (or natural PB)

Combine the oats, water, and sliced banana and cook on the stove over medium heat until thick. Add the rest of the ingredients (except for the peanut butter) and stir stir stir! Top with PB2 or peanut butter and devour!

After filling my belly, I was pumped up for a run! I had no real plans or expectations of myself except to get in a longer run (I was thinking 6-8 miles) at Green Lakes State Park. Well lo and behold, I was feeling pretty fantastic during my run and the weather was perfect so somehow I knocked out 10 miles! It’s been ages since I’ve completed a double digit run!

Here are the stats:

To refuel, I headed over to Wegmans where I bought a chocolate coconut water (nature’s sports drink just got infinitely better), Primal Meatless Jerky for protein, and a delicious salad beast! I proceeded to tear the jerky into strips to top my salad with. As if it didn’t already have enough toppings. 🙂

And now I’m thinking about a nap. Ah, the joys of being done working!

Happy Monday! I just finished my last day of work for the summer today and even though I love my job, it’s definitely a good feeling. I’m ready to go back to school already!

Favorite Daily Eats

I have to admit, I regularly get in food ruts. You know, where you eat the same thing day after day? I try to vary my diet but sometimes I just crave the same thing over and over!

Like my almond milk yogurt cup pictured above. 1/2 cup plain Amande cultured almond milk plus a spoonful of natural peanut butter, some dry roasted almonds, a handful of kashi honey sunshine, and some all natural chocolate sprinkles. The only thing stopping me from eating this everyday for the next seven weeks or so is the fact that we’re all out of almond milk yogurt. And chocolate sprinkles.

For lunch I’ve been having the same pita sandwich for days on end. 1 whole wheat pita halved and filled with garlic lover’s hummus, organic spring mix, organic tomatoes from the garden, and organic zucchini from the garden.

Sometimes when I’m feeling jazzy I drizzle on some balsamic vinegar or add fresh basil or spicy salsa but for the most part it’s the same thing through and through.

And then there’s the burger and veggie combo for dinner. Tonight was a butter bean burger with garlic, onion, oregano, and red pepper flakes, but over the course of the past two weeks chickpea and black bean burgers have made appearances on the dinner plate.

The recipe is pretty simple: 1 can of whatever beans you have on hand mashed with whatever seasonings your heart (or tastebuds?) desires plus a tablespoon of flour, a tablespoon of oats, and 2 tablespoons of vital wheat gluten. I cook my burgers on a George Foreman grill sprayed with cooking spray or brushed with oil and they always turn out good!

I’m also recently obsessed with Dinosaur Bar-B-Que’s original BBQ sauce.

It has good ingredients and better yet, it tastes amazing!

I could put this on everything.

Except maybe these cookies…

I’ll admit cookies weren’t part of my food rut, but I baked cookies tonight as a gift to my boss (my last day of work is tomorrow!) so of course I had to taste test one two. Recipe tomorrow!

Other unpictured, but worth mentioning, daily eats include fresh fruit of course! Apples, bananas, and watermelon!
